REGION OF DÃO

The Dão region is located in Beira, in central northern Portugal. Flanked by the mountains range of Caramulo, Montemuro, Buçaco and Estrela. This geographical situation is excellent for vines that, because of it, are protected from the influence of winds.

The 20000 hectares of vineyards of Dão are located mainly between 400 and 700 metres in altitude are are developed in shalley soils (in the South) or shallow granitic rocks.

Dão’s Controlled Origin Denomination produces the so-called DOC Dão wines, some of the best Portuguese wines.

The climatic conditions, the soil characteristics and the varieties that predominate in this region, especially the Touriga Nacional grape, typical of this area, grant these wines a higher level and give them their inimitable color, delicate aroma and a velvety taste.

The wines of Dão are also characterizes by their rare ability to age in a noble and harmonious way.

The Winery
Built from scratch and taking advantage of the slope of the ground so that gravity becomes an essential part in winemaking process, the winery Soito Wines, designed by architect Perdigão, has the ideal conditions for the creation of the best quality wines. It is here that we produce the wines of both “Quintas” combining traditional methods with a distinctive and innovative strategy that is based on the existing technology. In the winery you can visit the showroom, the fermenting room, the storage and the noble room, that is, the oak barrels room.

Stainless steel Vats

It is in the storage room that we find the stainless steel vats where, after fermentation is completed, the wines are stored properly separated by grape varieties.

Oak Barrels

Once properly selected by the winemaker, the wine is stored in French oak barrels from some of the most prestigious cooperage brands in the world - Taransaud, L'Adour and Seguin Moreau. At this stage, the wine "breathes" by the imperceptible cracks in the staves. At this moment, it is important to be focused on the cellar temperature, the grape varieties while ageing and the ideal period of time they should rest there in order to obtain a perfect balance of the aromas and the complexity we want to achieve in our wines.
